it’s been a crazy week at work already (and it’s only wednesday!) — but my body decided to retaliate today and i’m a bit under the weather. phil, being awesome, made me dinner, including an original recipe, while i felt sorry for myself on the couch. and it was absolutely delicious. i’m feeling loads better – i think he put something special in the sauce.
spelt fusilli with basbal sauce
enough for two, and works with any pasta of course
- 1 onion, chopped
- 2 cloves garlic, chopped finely
- 1 red chili, chopped
- 1 can chopped tomatoes
- 1 tsp dried oregano
- handful of fresh basil, chopped
- 2 tbsp balsamic vinegar
phil’s ‘basbal’ sauce consisted of the above ingredients all mixed together and heated up. and the ‘basbal’ is short for ‘basil balsamic’ in case it wasn’t obvious 🙂 the balsamic gave it a nice sweet edge, while the fresh basil is VITAL (no dried stuff) for a colourful and wholesome sauce.
for the full effect, mix the pasta up with the sauce before serving and add some grated goat’s cheese on top.
