since i use recipes from both america and england, i thought this page might be helpful for readers in either country. here are some basic conversions and terms that you may need to cook the recipes found on this site.
oven temperatures
275°F = 140°C = gas mark 1
300°F = 150°C = gas mark 2
325°F = 165°C = gas mark 3
350°F = 180°C = gas mark 4
375°F = 190°C = gas mark 5
400°F = 200°C = gas mark 6
425°F = 220°C = gas mark 7
450°F = 230°C = gas mark 8
475°F = 240°C = gas mark 9

1 cup rice = 225g rice
1 cup flour = 115g flour
1 cup butter = 225g butter
1 stick butter = 115g butter
1 cup dried fruit = 225g dried fruit
1 cup brown sugar = 180g brown sugar
1 cup granulated sugar = 225g granulated sugar
1 cup liquid = 275ml
1 pint liquid = 550ml
1 quart liquid = 900ml
1 level tablespoon flour = 15g flour
1 heaped tablespoon flour = 28g flour
1 level tablespoon sugar = 28g sugar

aubergine = eggplant
caster sugar = superfine sugar

confectioners’ sugar = powdered sugar
